Mexican Pizza

Serves 1

2 Large flour tortillas
1/2 cup refried beans
¾ cup shredded meat
½ cup shredded Mexican blend cheese
½ cup shredded lettuce
Diced tomatos
Vegtable oil

Preheat oven to Broil.

In a large skillet heat oil. Once hot fry flour tortillas on each side until a golden brown. Set aside on paper towel.

Take on tortilla, spread refried beans over top and use ¼ cup of cheese and spread on top. Place the second tortilla on top of the refried beans. Spread meat mixture over top and add shredded meat and the rest of the cheese.

Place on baking sheet and broil for about 5 minutes until cheese is melted.

Remove from oven, top with lettuce, tomatoes, and salsa. Slice up like a pizza and serve.
