Potato Skins

Serves 4
103 calories/serving
INGREDIENTS:
2 Medium potatoes
2 pieces of cooked bacon
1/4 cup shredded cheese
Butter
1 stalk green onion
Salt and Pepper

DIRECTIONS:
Preheat over to 450. Take 2 pieces of tin foil. Rub butter on the foil. Place potato on tin foil and roll up, place in oven for 50 minutes.

Remove from oven, the potatoes should be a little squishy, but not too much.Remove from tin foil and cut in half. Scoop some of the potato out living a little in the shell.


Top each potato with 1 tbsp cheese, bacon, and green onion. Broil for about 6 minutes.

Remove from oven and serve with sour cream.
