Low Calorie Banana Bread

Serves 10
89 Calories/Slice
INGREDIENTS:
2 Ripe Bananas
3/4 cup flour
3/4 cup oats
2 egg whites
1/4 cup fat free milk
1 tbsp white vinegar
1 cup Splenda
1 tsp Vanilla
1 tsp baking soda
2 tbsp chopped walnuts

DIRECTIONS:
Preheat oven to 325. Place bananas in mixing bowl and with blender mix up well. Add all other ingredients. Put into a loaf pan and bake for 50-60 minutes.

Corn Bread

Serves 8
Nothing is better on chili than homemade corn bread. The lineman likes to eat his with lots of honey.


INGREDIENTS:
1 1/2 cup cornmeal
1/2 cup flour
1/4 cup vegetable oil
1 1/2 cups buttermilk (Remember if no butter milk add 1 tbsp white vinegar to milk)
2 tsp baking powder
1 tsp sugar
1 tsp salt
1/2 tsp baking soda
2 eggs

DIRECTIONS:
Preheat oven to 450 degrees. Grease a round 9" pan. Mix all ingredients until mixed well. Pour into pan. Bake 20-25 minutes until done.

Meat Loaf

Serves 6
375 Calories/Serving

INGREDIENTS:
1 1/2 lbs ground beef
1 cup milk
1/2 tsp salt
1/4 tsp pepper
3 slices bread cubed
1 egg
1/2 cup ketchup
1/8 tsp garlic powder
1 small onion chopped
1 tbsp worcestershire sauce

DIRECTIONS:
Preheat oven 350 degrees. Mix all ingredients except ketchup. Spread mixture in 9X5 loaf pan. Spoon ketchup over top. Bake 1 hour until cooked through. Drain grease before serving.

Banana Bread

Serves 10



INGREDIENTS:
2 Ripe Bananas
1 3/4 cup flour
1/2 cup oil
1 tsp baking soda
1 tsp vanilla
2 eggs
1 cup sugar
1/4 cup plus 1 tbsp buttermilk (If you do not have buttermilk, use regular milk and add 1 tbsp white vinager to it)
1/2 tsp salt
1 cup walnuts

DIRECTIONS:
Preheat oven to 325. Grease bottom of 9X5 loaf pan. Put the banana in mixing bowl and usining beaters mash well, then add the rest of the ingredients. Bake for 1 hour 15 minutes. The top will be golden brown.

**Do Not double batch, it will not turn out. Make two seperate batches.

Apple Stuffed French Toast

Serves 2

INGREDIENTS:
6 Pieces of bread
1 large apple
butter
Cinnamon
3 tsp Brown sugar
2 tsp milk
Honey Nut cream cheese
1 Tsp Vanilla
1 Egg

DIRECTIONS:
 Thinly slice apple and place in a microwave safe bowl with about 1 1/2 tsp butter and a sprinkle of cinnamon. Microwave for 4 minutes, stirring occasionally.

While the apples are cooking mix together egg, vanilla, milk, and a sprinkle of cinnamon. Butter 1 side of each piece of bread. On the un-butter side place apple slices. Sprinkle 1 tsp brown sugar over each set of apples. If you choose on the other piece of bread spread cream cheese, (The Lineman does not like cream cheese)
 Seal the edges shut. Dip both sides in egg mixture and place over medium heat in skillet. Cook both sides until golden.

 Serve with syrup.

Tomato Basil Pizza-Low Calorie

Serves 1
196 Calories
I love Pizza, but I dont love the calories. This pizza was awesome! I am thinking about having it for dinner again tomorrow. I get The Lineman his pizza and then I make this one up for myself. That way we can still eat together. I pair this with a nice side salad. YUMMY!



INGREDIENTS:
1 Orowheat 100 calorie flatbread
1 Roma Tomato
1 light string cheese
5 fresh basil leaves

DIRECTIONS:
Preheat oven to 400 degrees. Cut flatbread open so it lays flat. Spray both sides with Pam. Shred string cheese and put on bread. Slice tomatoes and place over cheese along with basil.

Bake for 7 minutes.

Chicken Pot Pie

Serves 4


INGREDIENTS:
6 ounces chopped cooked chicken breast
2 cups frozen peas and carrots
1 medium potato
98% fat free cream of chicken soup
1 chicken boulion cube
2  9” pie crust
¼ tsp pepper

DIRECTIONS:
Bring 3 cups water to a boil. Add a peeled and chopped potato. When the potato is just about done, add frozen veggies.

While veggies are cooking, preheat oven to 400 degrees. Mix ½ cup of cream of chicken soup, pepper, and chopped chicken. When veggies are cooked, take 1 tbsp of broth and add to chicken mixture. Drain veggies and add to the chicken mixture.

Place mixture in pie crust, top with other pie crust and bake for 20 minutes until pie crust is done.

Chicken Parmessan

Serves 3


INGREDIENTS:

3 chicken breast
4 pieces bread
1 1/2 tsp salt
1 tbls dry oregano
1 1/2 tsp garlic salt
Pepper
1/2 cup flour
2 eggs
2 tbls oil
1/2 cup Parmesan cheese

DIRECTIONS:


Preheat Broiler. Take 4 pieces of bread and butter one side, broil the bread until very crispy. Remove from oven, change temp setting to 400 degrees.

Using the small side of your grader, grade the pieces of bread into a fine crumbs and place in bowl. Mix Crumbs, salt, oregano, pepper, and garlic. Place flour on plate. Beat eggs in a separate bowl.

Heat Oil in skillet over medium heat. Put chicken in bag and beat until flatten. Remove from bag. Dip in Flour, then egg, the bread crumbs. Place in oil. Cook both sides until crispy. Place on a cookie sheet. Repeat for all 3 breast.

Sprinkle each breast with parmesan cheese, reserve some for pasta if you choose. Cook in oven for 15 mins. Serve over pasta and marinara sauce.

Apple Cinnamon Pancakes

Serves 3-4 people

INGREDIENTS:
1 small gala apple
2 tsp cinnamon
1 tbsp sugar or splenda
Hungry Jack pancake mix

DIRECTIONS:
Chopped apple, add a tsp butter and microwave for about 3 minutes stirring often until the apples are tender.

Add cooked apples, cinnamon, sugar to 2 cups pancake mix and 1 ½ cups water.

Cook pancakes normal serve with Apple cinnamon Syrup.

Low Calorie Chicken Casear Pita

Serves 1

1 tbsp Parmesan Cheese
1 tbsp Kraft Free Casear Italian dressing
1 ½ cups Caesar romaine lettuce
2 oz chicken breast
1 Orowheat Pocket Thin Flatbread

DIRECTIONS:

Add lettuce, dressing, cheese, and chicken, mix well. Stuff into flat bread.

Lettuce Wraps

Serves 4

INGREDIENTS:
1 lb ground chicken (Safeway will order some in if they don’t have it in stock)
1 head iceberg or butter lettuce
1 medium onion chopped
2 tbsp garlic
1 tbsp reduced sodium soy sauce
¼ cup hoisin sauce
2 tsp fresh ginger diced
1 tbsp rice wine vinegar
2 tsp chili pepper sauce(Asian food isle)
1 can water chestnuts finely diced
1 bunch green onion
2 tsp sesame oil


DIRECTIONS:
Rinse lettuce leaves and set aside.

Cook chicken in a skillet over medium heat. Add onions, garlic, soy sauce, hoisin sauce, ginger, vinegar, and chili sauce. Once the chicken is cooked add water chestnuts and green onions. Mix well.

Stir in sesame oil and serve.

Skillet Chicken

Serves 2


INGREDIENTS:
2 chicken breasts
2 tbsp olive oil
1 tsp chopped garlic
2 slices pepper jack cheese
2 slices American Cheese
marinade
2 tbsp chopped garlic
2 tbsp olive oil
1 tsp crushed red pepper flakes
1/4 tsp black pepper
1/4 tsp salt

DIRECTIONS:
Pound Chicken breast until thin. Combine all marinade ingredients and let sit in the refridgerator for at least 30 minutes.

In skillet add olive oil and heat over medium. Add chicken breast. Season both sides with salt and pepper. Cook about 3 minutes on each side so it gets a golden brown. Cook for 9-11 minutes.

When chicken is cooked and still in skillet place a slice of each cheese on top.

Serve with mashed potatoe, rice pilaf, or side salad.

PINAPPLE MOJITO

Serves 1
The Lineman's favorite drink is a Mojito, however not all places make them, so I have mastered this one for him.
INGREDIENTS:
2 Ounces Dark Rum
3 Ounces Pineapple Juice (Half a mini can)
6 Ounces Ice
5 Mint leaves
2 tsp Brown Sugar
Chunks of Pineapple

DIRECTIONS:
Put Ice in a shaker, add rum, juice, mint leaves, brown sugar, and 3 pineapple chucks. SHAKE WELL. Pour into a serving glass, garnish with a Strawberry if you choose.

Peanut Butter Chocolate Chip Cookies

Makes 35 Cookies
68 Calories/Cookie

INGREDIENTS:
¼ Cup peanut butter
1 cup flour
1 cup quick oats
1 tsp baking soda
2 cups Splenda
2 Egg Whites
1 Cup Brummel & Brown Butter
2 tsp vanilla
½ cup chocolate chips semi sweet
1 bag peanut M&Ms

DIRECTIONS:
Preheat oven to 375.

 Mix flour and oats together to almost grind the oats down. Add baking soda, Splenda, and butter. Add egg whites, peanut butter, and vanilla. Mix well. Add M&Ms and Chocolate chips.

 On an ungreased cookie sheet place 1 tbsp of cookie dough on sheet. Bake 12 minutes or until bottom is browned.



Lay out on a cooling sheet.

Chocolate Silk Pie

Serves 8
 DIRECTIONS:
Ingredients:CRUST:
1 cup flour
6 tbsp butter
2-3 tbsp water

FILLING:
5 squares semi-sweet baking chocolate
3/4 cup butter (not margarine)
1 cup sugar
1 1/2 tsp vanilla
3 eggs






INGREDIENTS:
Preheat over to 475. Mix flour, butter, and water together. Roll out on a floured surface. Place in pie pan. Cook for 10 minutes.

Melt 5 squares of chocolate on stove or in microwave and let cool. Cream butter and slowly add sugar. Blend til light and fluffy. Add cooled chocolate and vanilla. Add 1 egg a blend on medium for 5 five minutes, add second egg, blend five minutes, finally add third egg and blend again for 5 minutes. Pour continents into pie crust. Refrigerate for 2 hours.

Lazy Day Doughnuts

Makes 8 Doughnuts
You can make this doughnuts faster than driving to the store. So easy, so yummy!
 INGREDIENTS:
1 Tube of biscuits
1 Apple
Cinnamon
Sugar
3/4 cup powder sugar
2 tbsp butter
3 tbsp milk
Vegetable oil for frying

DIRECTIONS:
Heat oil to in large skillet to medium.

Dice up apples into small pieces.

Cut open biscuit and stuff with apples, cinnamon, and sugar. Close the biscuits and make sure the seam is tight. (I did this for 4 of the doughnuts)

 For the other 4 of the doughnuts, use a small cookie cutter to cut center out of.

 Place all in the oil. Make sure to move around while frying so they don't stick to the bottom. After a couple of minutes, flip over to cook other side.
 Glaze:
Mix powered sugar, butter, and warm milk together. Place the cooked doughnuts in glaze and coat all sides.
 Place on a cooking sheet to let glaze set. If you want you can do more than one coat of the glaze on the doughnuts.

Strawberry Pie

Serves 8
175 calories/serving
35 calories/serving if no crust
 INGREDIENTS:
Pie crust:
1 cups flour
6 tbsp butter
2-3 tbsp water

Filling:
4 cups sliced strawberrys
3 tbsp cornstarch
3/4 cup water
1/2 small tub cool whip
1 cup Splenda

DIRECTIONS:
Preheat oven to 475. Mix flour and butter well, slowly add water until is mixed well. Roll out dough on a floured surface. Place in a 9" pie pan. Using a fork, polk holes in the bottom of crust. Bake for 10 minutes.
 Once pie crust is cooked remove from oven and let cool.

Place 2 cups strawberries in the bottom of pie crust. In a small sauce pan combine water and cornstarch, mix well. Turn stove onto medium heat, add Splenda and strawberries. Mash strawberrys once boiling and then reduce heat and let simmer for about 5 minutes until it thickens.  Pour into pie crust.
 Let cool to room temperature, Place in refriderator, top with whipped cream before serving.

Poppers

Makes 8 Poppers

These take a little while to cook so I always start them first, they take about 20 minutes, that way you have a nice appetizer while grilling the rest of your food.

This recipe was passed down to us by another Lineman when we would do Sunday night family dinners in the RV park.


INGREDIENTS:
4 Jalapenos
Fat free cream cheese
Seasoning salt
8 Pieces of bacon


Preheat grill to medium. Wash peppers, just off top and slice in half. Clean out all seeds. (You may want to wear a pair of gloves while deciding peppers or wash your hands A LOT. DO NOT TOUCH your eyes, kids or anything until finished)




Spread a little cream cheese into each pepper, not a lot of it will ooze out. Sprinkle a little seasoning salt on the cream cheese, wrap bacon around each half of pepper.



Cook over medium heat turning frequently until bacon is cooked.

Sesame Beef

Serves 2
INGREDIENTS:
1/4 cup reduced sodium soy sauce
3 tbsp rice vinegar
2 tbsp hoisin sauce
2 tbsp brown sugar
1 tbsp fresh ginger
1 tbsp sesame seed oil
2 tsp cornstarch
1/4 tsp crushed red peppers
1 package beef flavored ramen noodles
1 lb boneless sirloin
3 cloves garlic, minced
1 tbsp sesame seeds
1 green onion stalk

DIRECTIONS:
Cook ramen noodles according to package, add seasoning and drain. Keep Warm.

In a cup mix soy sauce, vinegar, hoisin sauce, brown sugar, ginger, 2 tsp sesame oil, cornstarch, and re pepper. Set aside.

In a large skillet, heat 1 tbsp vegetable oil over medium heat. Add beef and garlic. Fry for 3 minutes. Add soy sauce mix and cook together 1 minute. Sprinkle with sesame seeds and green onion, serve over noodles.

Bacon Potato Salad

Serves 4
Once you have had this potato salad, there is no going back to the plain jane.


INGREDIENTS:
3 Medium Potatoes
4 Slices of cooked Bacon
¼ lite mayo
1 tsp spicy mustard      
1 tsp pepper
½ tsp salt
3 boiled eggs
¼ cup cubed cheese
2 tbsp yellow onion chopped.
1 green onion stalk chopped



DIRECTIONS:

Boil 4 cups of salted water. Peel and slice potatoes into bite able pieces.  Once water is boiling place potatoes in. Depending on how big your pieces are boil for 6-10 minutes. The potatoes should be soft enough a fork can go through, but not too soft they fall apart.

Drain potatoes and let cool. In a medium mixing bowl add mayo, mustard, salt, pepper, cheese, chopped bacon and yellow onion. Mix well. Once the potatoes have cooled gently mix them in with the eggs. Refrigerate until time to serve.

Ribs

 
INGREDIENTS:
6 Beef Ribs
1 bottle Sweet baby Rays Sweet and Spicy Sauce
1 can beer
1 tbsp brown sugar
1 tbsp worcestshire sauce
1 tbsp honey
Monterey Seasoning

DIRECTIONS:
Season meat with monetary seasoning. In a crockpot mix together all ingredients except the ribs. Once mixed well place Ribs in crockpot. Cook on low for 6 hours, you know they are done when the meat pulls away from the bone easily.

Banana Cream Pie

Serves 8, 259 calories/serving
(119 Calories if no crust)


INGREDIENTS:

Crust:
1 cups flour
6 tbsp shortening
2-3 tbsp water

Pie:
2/3 Cups Splenda
¼ cup cornstarch
½ tsp Salt
3 cups fat free milk
2 Eggs
1 Tbsp Vanilla
2 Tbsp Brummel & Brown Butter
2 Bananas
1 small tub fat free cool whip

DIRECTIONS:

To make crust:
Preheat oven to 475. Add flour, shortening, and water. Mix well together. Roll out on a floured surface and place in a 9” pie tin. Polk bottom of crust with fork, then bake for 8- 10 minutes. Take out and let cool.

While pie crust in cooking in a small sauce pan mix Splenda, cornstarch, salt and milk over medium heat bring to a boil while constantly stirring. Boil for 1 minute. Remove from heat; add eggs, vanilla, and butter. Bring back to a boil and boil for 1 minute while stirring well.  Set aside and let cool.

Once pie crust has cooled, slice bananas into the bottom. Once the cream filling has cooled pour into pie crust as well. Top with whipped cream and refrigerate for at least 1 hour before serving.

Blueberry Buckle

Serves 6
INGREDIENTS:
3/4 cup Splenda
1/4 cup Brummel & Brown Butter
1 egg
1/2 cup fat free milk
2 cups all-purpose flour
2 tsp baking powder
1/2 teaspoon salt
1 small container fresh blueberries

For Topping:
1/2 cup Splenda
1/3 cup all-purpose flour
1/2 tsp ground cinnamon
1/4 cup Brummel & Bown

DIRECTIONS:
Preheat oven to 375 degrees F. Grease one 8x8 inch pan or I use a 9" spring form bag.     
  1. Cream together 3/4 cup sugar, shortening, and egg.
  2. In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased pan.
  3. To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Using a fork, mix together until it become crumbly. Sprinkle on top of cake batter.
 Bake at 375 degrees for 25-30 minutes.
