Strawberry Buttercream Cupcakes

SERVES 12

Summer time desserts are my most favorite, plus the Linemen on the crew seem to like them too.

INGREDIENTS:
1 Box White Cake Mix
1/2 cup or 1 individual container natural applesauce
4 Egg whites
1 1/4 cup water
1 Can Strawberry Comstock pie filling mix
1 Cup softened butter
32 oz powdered sugar
12 JUMBO cupcake wrappers
1 large muffin pan (Holds 12)


DIRECTIONS:
Preheat oven to 350 degrees.

Hand Mix cake mix, applesauce, egg whites, and water until smooth.




With a large spoon scoop one spoon of cake Mix into 12 cupcake wrappers. Then scoop 1 spoon of the strawberry filling into each cup.

 Add 1 more scoop of the cake mix on top of the strawberry mixture. Put into the oven and Bake for 20 minutes or until done.

FOR THE ICING:
In a mixing bowl, blend butter. Slowly add the powder sugar. Mix well. Add 1/3 cup of the comstock strawberry filling. If you want more strawberry taste add more filling. Blend Well. Scoop into a frosting bag and once the muffins cool, ice.
