Sausage Stuffed Peppers

1 Cup Italian Sausage
1 Box Jiffy Corn Bread
1/4 cup corn (Frozen or canned)
2 tbsp red onion
1 tbsp butter
2 Red Peppers
1/2 water
1/4 milk
2 slices pepper jack cheese

Preheat oven to 350. Cut peppers in half and clean out seeds, place in a microwave safe bowl and add 1/2 cup water. Microwave for 4 minutes. Meanwhile, In a medium size skillet cook sausage, when almost done add corn, red onion, and butter. Once the sausage is cooked and well blended with corn and onions, slowly add milk and corn bread mix. Once mixed well, remove from heat. Drain water from peppers and evenly scoop the sausage mixture into each pepper. Half the cheese slices and place on each pepper. Place on baking sheet or casserole dish and cook for about 20 minutes.
