4 Medium sized chicken breast (about 4 oz each)
1/2 cup chopped celery
1 cup chicken broth
2 1/2 Cups bread crumbs (small size)
1/4 cup yellow onion
4 tbsp dried cherries
1 tsp chopped parsley (dried or fresh)
Salt and Pepper to taste
In a medium sized pan combine celery, onions, and chicken broth. Simmer for about 5 minutes over medium heat. Add parsley, salt, and pepper. Add bread crumbs, one cup at a time, and mix well into the mixture. Remove from heat.
Preheat grill to medium heat.
Take the chicken breast and butterfly. Put 1/2 cup of stuffing mix into each chicken breast. Place 1 tbsp of dried cherries on top of stuffing. Close chicken and press firmly to make sure stuffing will stay in. Once all four chicken breasts have been stuffed place on grill. Grill for about 6 minutes on each side. Each grill is different so just cut it open to make sure there is no pink before serving.
