Chimichanga

SERVES 3
I have been craving Maycayo's Chimichangas. Well, when The Lineman and I are on the road there is not always a Macayo's near by. So this is what i came up with.

There is an "All In" version and a "Low Cal" version so everyone in the family is happy.

"ALL IN"
 LOW CAL:  242 CALORIES
Serving Size, two mini chimis
INGREDIENTS:
1 cup long grain rice
1 beef/chicken bouillon (depending on what meat you are cooking with)
2 cups shredded meat (I used left over roast beef)
1 4 oz can chopped green chili's
1 16oz can fat free refried beans
1 16oz can enchilada sauce (I like green)
1/4 cup onion
1/2 cup mexican cheese
1/2 cup vegetable oil
2 flour tortillas
2 La Tortilla Factory low carb 50 calorie tortillas

DIRECTIONS:
Cook rice according to package with the bouillon cube stirring throughout. In a small skillet heat onions and green chili's over medium heat for about 3 minutes. Add meat and mix well.


Preheat oven to Broil.

 Place tortillas on clean counter. In the "All In" tortillas place a spoon of beans, meat mixture, rice, and cheese.
 In the LOW CAL version spilt 1/4 cup bean, 1/4 cup meat, 2 tbsp of rice between the two small tortillas.

Heat oil in a large skillet.



Roll Up tortillas like a burrito. Place the "LOW CAL" on a baking sheet. Spray with Pam and place in oven for about 12 minutes. Rotate half way through.

 Place the "ALL IN" in the heated oil, cook over medium heat for about 3 minutes, Turn. Once cooked on both sides, set on paper towel to drain grease.
Put on plate, top with green sauce and cheese for "All In" for "Low Cal" top with 2 tbsp green sauce.
