BBQ Beans

Serves 12
Once you have had these beans, there is no going back to the can!!



INGREDIENTS:
1 lb ground beef
1 lb bacon chopped up
1 cup chopped onions
2 cans pinto beans
2 cans kidney beans
1 bottle bbq sauce


DIRECTIONS:
In a crockpot on low add beans, onions, and bbq sauce.

Cook bacon, add to crockpot.

Cook ground beef, add to crockpot.

Cook on low for 4-6 hours. This is always a HUGE hit at the lineman family bbq's!!

Au Gratin Potatos

Serves 6-390 calories/serving




INGREDIENTS:
6 medium potatoes
1/4 cup butter
1 medium onion chopped
1 tbsp flour
2 cups milk
2 cups shredded cheddar cheese
1/8 tsp paprika
1/4 tsp pepper
1 tsp salt

DIRECTIONS:
Preheat oven to 375.

Peel and thinly slice potatoes.

Heat margarine in a medium sauce pan over medium heat. Add onions, and cook about 2 minutes. Add flour, salt and pepper, cook until bubbly. Remove from heat, add milk and 1 1/2 cups of cheese. Heat until boiling, stirring constantly.

Spread potatoes in an ungreased 9X13 pan. Pour cheese over potatoes, top with remainder cheese and paprika. Bake for 1 hour.

Lasanga

Serves 5
Once again this recipe has a "Low Cal" Version and the "All In" version, so those of you trying to cut back can still enjoy what the rest of your family is eating.

"Low Calorie Version" Serves 1:  276 Calories







INGREDIENTS:
2 oz ground beef (left overs are perfect, if you have more just add it to the "All In" version to make it Meaty)
1 lb spicy Italian sausage
1 can 26.5 Hunts Pasta Sauce (Hunts in super fresh, and low in calories)
1 1/2 cups chopped mushrooms
15 oz Part Skim Ricotta Cheese
1 egg
2 tbsp Italian seasoning
1 1/4 tsp garlic powder
1 1/4 tsp onion powder
9 sheets of Ronzoni Wheat Lasagna noodles (Half of the package)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup shredded pepper jack cheese


DIRECTIONS:
Cook Noodles according to package.

Brown sausage.

Mix together for "Low Calorie" Version:
2 oz ground beef (If you have not invested in a food scale you should. They sell them at target for $3) (I used the left over ground beef from the Tacos)
2 1/4 tbsp ricotta cheese
1 oz chopped mushrooms
1/4 cup Hunts marinara sauce
1 tsp Italian seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper (If you like it a little spicy)

Mix the remainder of the ingredients together including browned sausage for the "All IN"


Drain noodles, reserve 3/4 of a noodle (1 oz) for the "Low Cal" version.

For the "All In" layer noodles, meat sauce, and a little bit of each type of cheese. Repeat until you have used all ingredients.

For the "Low Cal", Cut the 1 oz of noodle into 3 sections. Layer it with Noodle, Sauce, Noodle Sauce, Top with 1 tbsp of mozzarella cheese.

Bake at 375 for 1 hour.

Tacos

Makes 12 Tacos
Low Calorie version: 2 tacos at 251 calories

Low Calorie Version


 La Tortilla Factory Low Carb small Torillas (I purchase these at Safeway or if on the Road at Amazon.com):


Hand made Corn Tortillas for The Lineman, smaller than the low carb ones:


INGREDIENTS:
1.5 lbs 93% lean ground beef
1/4 cup diced yellow onion
1 15 oz can fat free refried beans
Shreaded lettuce
Cherry Tomatoes
Cheddard cheese shreaded
Salsa
Fat Free Sour Cream

DIRECTIONS:
Preheat oven to broil.

Brown ground beef and onions. I do not add add seasoning to my meat so I can use the left overs in something else (I use the left overs from this dish for my low cal Lasanga for tomorrow night). Once the beef is cooked cover and set aside. Heat oil in pan to fry tortillas in.

Spray the Low Carb version of the La Tortilla Factory tortillas with Pam on both sides. I put a little pie pan in the center to help hold the shape. Broil for about 4 minutes on each side.













Broiled "Low Cal" Tortilla













Fry each corn Taco shell about 2 minutes on each side













Heat beans in microwave safe container for about 2 minutes, stirring halfway.

Build your tacos the way you like them. See low cal version below.

The "ALL IN" VERSION













For the Low Cal Tacos:
2 oz ground beef
1/4 cup beans
1/2 cup lettuce
4 cherry tomatoes
Salsa
Split between two low carb taco shells.

Chicago Style Pizza

Serves 6
This pizza goes great with Wings!!



 This pizza is HUGE. It will make two 16" pizzas or you can make individual pan pizzas.


INGREDIENTS:
1 1/3 cup warm water
2 tbsp yeast
1/4 milk
1/2 tsp salt
4 cups flour
1 tbsp sugar
2 tbsp vegetable oil
Olive oil

DIRECTIONS:
In a mixer dissolve yeast in warm water, let mixer mix on low for 5 minutes until foamy. Add salt, sugar, milk, and oil. Once mixed add flour one cup at a time. Reserve 1/2 cup for kneading. Once flour is mixed well flour your hands and a clean surface. Kneed dough, then use the olive oil and cover the outside of the dough. Place back in mixing bowl and cover. Let rise for 1 hour.




















Preheat oven to 400 degrees. Use about 1/2 tbsp of Olive Oil and oil pan.

















Roll out the dough on the pan and add all the toppings you choose. Bake for about 20 minutes.

Chimichanga

SERVES 3
I have been craving Maycayo's Chimichangas. Well, when The Lineman and I are on the road there is not always a Macayo's near by. So this is what i came up with.

There is an "All In" version and a "Low Cal" version so everyone in the family is happy.

"ALL IN"
 LOW CAL:  242 CALORIES
Serving Size, two mini chimis
INGREDIENTS:
1 cup long grain rice
1 beef/chicken bouillon (depending on what meat you are cooking with)
2 cups shredded meat (I used left over roast beef)
1 4 oz can chopped green chili's
1 16oz can fat free refried beans
1 16oz can enchilada sauce (I like green)
1/4 cup onion
1/2 cup mexican cheese
1/2 cup vegetable oil
2 flour tortillas
2 La Tortilla Factory low carb 50 calorie tortillas

DIRECTIONS:
Cook rice according to package with the bouillon cube stirring throughout. In a small skillet heat onions and green chili's over medium heat for about 3 minutes. Add meat and mix well.


Preheat oven to Broil.

 Place tortillas on clean counter. In the "All In" tortillas place a spoon of beans, meat mixture, rice, and cheese.
 In the LOW CAL version spilt 1/4 cup bean, 1/4 cup meat, 2 tbsp of rice between the two small tortillas.

Heat oil in a large skillet.



Roll Up tortillas like a burrito. Place the "LOW CAL" on a baking sheet. Spray with Pam and place in oven for about 12 minutes. Rotate half way through.

 Place the "ALL IN" in the heated oil, cook over medium heat for about 3 minutes, Turn. Once cooked on both sides, set on paper towel to drain grease.
Put on plate, top with green sauce and cheese for "All In" for "Low Cal" top with 2 tbsp green sauce.

Low Calorie Smoothie

Hungry Girl-Berrynana Blast-135 calories
 INGREDIENTS:
1/2 cup Diet Cranberry Raspberry Juice
1/2 of a banana sliced
2 medium strawberries, tops removed
1/2 cup fat free yogurt
1/4 cup crushed ice
Magic Bullet (This is the perfect size for the RV life) or Blender
**Side note: I did add some protien powder to this shake, I did not add it as part as the calories above
 DIRECTIONS:
Combine all ingredients and blend until smooth.

Honey Hot BBQ Wings

SERVES 2

INGREDIENTS:
1 Package drumsticks
1 Bottle honey bbq sauce
1/4 cup Red Devil hot sauce
Pepper
Poultry Seasoning


DIRECTIONS:
1-Clean Chicken by cutting all skin off. Season with pepper and poultry seasoning.
2-Mix 1/2 cup honey bbq and 2 tbsp of Red Devil in a ziploc bag. Place chicken in bag and let marinate for about 30 minutes.

3-Preheat Grill to medium low. In a small mixing bowl mix 1/4 bbq sauce and the rest of the Red Devil sauce. Use this as a basting sauce while grilling.

4-Grill for 30 minutes constantly rotating every 3 minutes or so.

Chicken Salad

Serves 3
139 Calories per 3/4 cup


INGREDIENTS:
4 Sticks of Celery
1/2 chopped grapes
1/2 chopped cucumbers
1/2 tsp pepper
1 can 12.5 oz canned chicken
1/4 cup fat free cool whip
1/2 tsp mustard


DIRECTIONS:
Put everything in a bowl and mix well. Serve on low calorie bread or a bed of lettuce.

Cold Corn Avocado Salad

Serves 7, 1/2 cup/serving
 62 calories/serving
 INGREDIENTS:
1 Package Birds Eye steamer corn
1 Cup chopped cucumber
7 cherry tomatoes diced
1/4 cup red onions diced
1 oz chopped avocado
1/3 cup Kraft Free Italian Dressing
1/4 tsp garlic powder
Pepper to taste

DIRECTIONS:
Cook corn according to package. Once cooked open and place corn in a mixing bowl to cool. Once the corn has cooled off (15-20 minutes) add all ingredients except avocado. Mix well. Top with chopped avocado and refrigerate for 30 minutes before serving.

Pot Roast in the Crock Pot

SERVES 4

INGREDIENTS:
1 Bottom Round Beef Pot Roast
10 Large Carrots, Peeled and chopped
5 Russet potatoes washed and cut into fours
2 tbsp Worcestershire sauce
1/2 tbsp olive oil
1/2 tbsp McCormick Monterrey seasoning
1 tsp garlic powder
Half of a yellow large onion, sliced into big chucks.
1 tsp pepper
Crock pot

DIRECTIONS:
Taking 2 forks tenderize your meat, a lot. This will help the meat literally fall apart. Place meat in crock pot with fat side down. Pour Worcestershire sauce, olive oil, and Monterrey seasoning over meat. Place carrots, onions, and potatoes in crock pot. Evenly season all with garlic powder and pepper.

Put the crock pot on low for 6 1/2 hours.

STARTING:


3 HOURS IN
If you are home when the meat has been cooking for about 3 hours, I stir mine around, I rotate my meat, and pour all the juice over the veggies.

At 6 1/2 hours your meat should be very tender. I move my juices around, and turn off the crock pot. I let sit for at least 30 minutes before serving. I will sometime let sit up to 4 hours waiting for The Lineman to get home.

Strawberry Buttercream Cupcakes

SERVES 12

Summer time desserts are my most favorite, plus the Linemen on the crew seem to like them too.

INGREDIENTS:
1 Box White Cake Mix
1/2 cup or 1 individual container natural applesauce
4 Egg whites
1 1/4 cup water
1 Can Strawberry Comstock pie filling mix
1 Cup softened butter
32 oz powdered sugar
12 JUMBO cupcake wrappers
1 large muffin pan (Holds 12)


DIRECTIONS:
Preheat oven to 350 degrees.

Hand Mix cake mix, applesauce, egg whites, and water until smooth.




With a large spoon scoop one spoon of cake Mix into 12 cupcake wrappers. Then scoop 1 spoon of the strawberry filling into each cup.

 Add 1 more scoop of the cake mix on top of the strawberry mixture. Put into the oven and Bake for 20 minutes or until done.

FOR THE ICING:
In a mixing bowl, blend butter. Slowly add the powder sugar. Mix well. Add 1/3 cup of the comstock strawberry filling. If you want more strawberry taste add more filling. Blend Well. Scoop into a frosting bag and once the muffins cool, ice.

Ice Coffee, Moon Juice Style

Serves 1 20 oz cup

Now that it is Summer, The Lineman prefers Ice Coffee. Some of the other journeyman lineman on his crew refer to his coffee as "moon juice" because it is so sweet. Well, that is the way The Lineman likes it.

So the first thing I do is brew an extra 2 cup of coffee to make coffee ice cubes out of.

INGREDIENTS:
Brew 6 cups of coffee
Carmel Syrup
1 tbsp fat free sweetened condensed milk
Splash of fat free vanilla creamer
DIRECTIONS:
Drizzle cup with Carmel



































Add Coffee Ice cubes, add sweetened condensed milk, cooled coffee, and a splash of creamer.
